Caramel Chocolate Cake

My sister-in-law Alisha has the misfortune of a January 1st birthday. We all remember her at midnight on New Year's Eve, but somehow manage to forget to call her on the actual day! With the business of holiday recovery, she simply slips my mind. We rarely celebrate her birthday as a family because we've just spent several days together at our mom's for Christmas.

Recently, my brother and his family visited Cincinnati, and I decided to make it a celebration of Alisha's birthday. I called my brother about a week before their visit and asked what her favorite meal was, which he relayed without hesitation. However, when I asked about her favorite dessert he paused for quite some time. After almost 13 years of marriage! He finally said, "She likes anything with caramel on it." So began the search through my cookbooks and recipe files to come up with "anything with caramel on it." I came across this easy dessert and decided to give it a try. It was superb! You are not going to believe how easy the recipe is when I share it with you. If you need to make a delicious treat for someone who likes "anything with caramel" this is the dessert for you!

This was a huge hit with the family. They all wanted the recipe and were amazed at its simplicity. I used a dark chocolate cake mix and substituted sugar free caramel sauce, fat free sweetened condensed milk and sugar free whipped topping to make it less fattening and less sugar. No one noticed the substitutions. Enjoy!

Caramel Chocolate Cake

To Start and Have Prepared:

  • 1 box of chocolate cake mix
  • 1 jar of caramel topping
  • 1 can of sweetened condense milk
  • 1 tub of whipped cream

Directions:

Prepare the chocolate cake in a 9x13 pan according to the directions on the box. Cool for a few minutes. With a wooden spoon poke holes in the cake. Drizzle the caramel sauce over the cake. Drizzle the sweetened condensed milk and let sit for a few minutes. Spread the entire tub of whipped cream over the cake. Cover with plastic wrap and chill for several hours.
