Russian Salad

Whenever the warm weather approaches, I always begin to anticipate all of the good, fresh vegetables that will be soon appearing at our markets and roadside stands. Chock-full of delicious vegetables, one of my favorite summer treats is a Russian salad.

The first time I had this salad was at Natasha's Café, in Lexington, Kentucky. It was an interesting place, which was run by Natasha and her husband who were both from Russia. Russian music played in the background and the couple was so welcoming - this café became a favorite of mine during the time I lived in Lexington.

Not only was Natasha's a restaurant but also a boutique selling authentic Russian items including clothing, jewelry, music, décor, and cooking items. They have since opened a larger restaurant in the heart of Lexington, but the little original Southland Drive location is still open. Russian Salad

To Start and Have Prepared:

  • 6 medium tomatoes, diced
  • 2 cucumbers, peeled and diced
  • 1 onion, chopped
  • 1/2 cup of sour cream
  • 1 Tbs vinegar
  • salt, pepper and dill to taste

Directions:

Combine the tomatoes, cucumbers, and onions. Mix the sour cream and vinegar. Toss into the salad. Add salt, pepper, and dill to taste. (fresh chopped dill is the best but dried dill is good too!)

Note:

This salad can be eaten several different ways - serve it alone or on a bed of lettuce, serve it with tortilla chips like a salsa or use it as a topping for grilled chicken or fish. Use your imagination!
