Autumn Punch

On Halloween day, five years ago we received quite a surprise. Our son, Joshua, was born. Every year on the weekend prior to Halloween we have a birthday party and invite friends and family to celebrate the event. This year was extra special. Not only were we celebrating Joshua's birthday but it would be the first time that many of our friends and family would see our new home since moving in on October 3rd.

Joshua made it clear that he wanted hot dogs, tater tots, ice cream and a chocolate Spiderman cake. I also wanted to plan some additional food and snacks for the adults to enjoy and something special to celebrate the beautiful autumn season. I happened to be thumbing through a new cookbook, Fix-It and Forget-It for the Diabetic, and I found an intriguing Punch Recipe.

First,I would like to encourage everyone to check out the Fix-It and Forget-It series. I have bought a couple at my local grocery store, and we have many of them at the library. They are Slow Cooker/Crockpot recipes. My family has loved every recipe I've prepared from the series.

Back to the punch! The recipe is for an Autumn Punch. It made the house smell so delicious and inviting and the adults raved about the flavor.

As our guests arrived I gave them a warm mug of this delicious punch to sit back and relax with.

Autumn Punch

To Start and Have Prepared:

  • 2 oranges
  • 8 whole cloves
  • 6 cups apple juice
  • 1 cinnamon stick
  • 1/4 teaspoon ground nutmeg
  • 3 tablespoons lemon juice
  • 1/4 cup honey
  • 2 1/4 cups pineapple juice

Directions:

Press cloves into oranges. Bake at 350 degrees for 30 minutes. Meanwhile, in a crockpot or slow cooker, combine apple juice and cinnamon stick. Add remaining ingredients except oranges and cook for 1 hour. Add oranges at end either sliced or quartered.
