Tomato Time!
It's that time of year - tomato time! I LOVE tomatoes! My dad always had a wonderful garden, and there was nothing like going out to the garden on a hot summer day and picking a red, ripe, tomato, wiping the dirt off and biting into the juicy goodness. To this day, my mom and dad still grow and can tomatoes, while I just planted my first garden this year. I'm enjoying all of the tomatoes but what to do with them?
Of course you can always fry up the green ones - which reminds me of one of my favorite books of all time, Fried Green Tomatoes at the Whistle Stop Café by Fannie Flagg. This is an epic story that spans generations. It will have you laughing and crying within a turn of a page. It was also made into a wonderful movie starring the great Jessica Tandy and Kathy Bates, but the book is better! (Both the book and movie are available at the library, by the way!)
Here is a recipe that my mom has used for years

Tomato Time
Ingredients:
Dough Mixture:
- 2/3 cup milk
- 2 cups of Bisquick
3 medium tomatoes sliced
Topping:
- 1 medium onion
- 2 T. butter
- 3/4 cup sour cream
- 4 oz. grated cheese
- 3/4 t salt
- 1/4 t pepper
- 1/4 t oregano
- Pinch of sage
Directions:
Butter a 13x9 dish. Mix the dough mixture and pat it down in the dish. Wet your fingers to help prevent the dough from sticking. Cover the dough with sliced tomatoes. Mix the topping ingredients and spread it on top of the tomatoes. Bake at 375 degrees for 25-30 minutes. Let stand 10 minutes before cutting.
Note:
This makes a fabulous summer meal with some veggies and salad. It is also a great appetizer when cut into small bite size pieces. If you take it to a potluck, expect to bring back an empty dish!
